In a shallow bowl, mix the first 6 ingredients. Place milk in a separate shallow bowl. In an electric skillet, heat 1/4 in. of oil to 375°.
In batches, dip fish in milk, then coat with baking mix mixture; fry for 5 minutes on each side or until golden brown and fish flakes easily with a fork. Serve immediately with lemon wedges.

Start with sprinkling the fillets with salt and pepper as desired. Next, coat the fish with mustard or sauce. Here is where you get to tailor the recipe to the taste of the person you are serving. You can use spicy, yellow, hot Chinese or Dijon mustard for the classic grilled recipe. If you are feeding someone who is allergic to mustard, or just can't stand it, you can substitute thousand island sauce, a mayo/hot sauce mixture, dill sauce or another flavor.
Next, you will roll the fillets in the flour. Again, there is some flexibility here. Whole wheat flour adds a slightly bitter flavor, where all-purpose flour will not. You can also use gluten-free flour if one of your eaters is gluten intolerant. Lastly, you can even use corn meal if your side dishes would be complimented by it.
Grill the fillets on a pre-heated grill that is 400 degrees. Make sure to use a close grid grill panel so that pieces of fillet will not fall through. If necessary, you can put down aluminum foil on your grill surface and put the fillets on it.
Grill for three minutes on each side. Check for consistent cooking and, if necessary, cook for no more than an additional one minute on each side.
Remove fillets from grill and sprinkle with Cajun or seafood seasoning!

Preheat oven to 350 degrees.
Dip fish in melted butter, salt, pepper and lemon juice.
Place fish fillets into shallow baking pan.
Place mushrooms and onions over the top of fish, then spoon any remaining butter mixture over fish.
Bake at 350°F for 15-20 minutes until fish flakes.

You will need to crush the pork rinds into crumbs, you can use a rolling pin for this purpose by simply putting the rinds into a gallon bag.
Keep the rinds in the same bag after crushing and add half of the available pepper and garlic powder to it. Start shaking the bag so that the spices inside may combine with the rinds evenly.
Once done, convert the rinds into a wide plate or backing sheet, take another bowl and crack the eggs in it and beat them into an egg wash
Take the Lake Erie Walleye fillets one by one and dip them in the egg wash, making sure they are coated perfectly so that no sides of the fillet are left dry and let the excess egg wash drip off before proceeding to the next step
Then take the Lake Erie Walleye fillet to the crumbs/ breading plate and coat the walleye fillet evenly, making sure all sides are covered well
Get the air fryer basket ready by spraying it with cooking oil such as PAM, do not apply excessive oil as you just need enough to keep the Lake Erie Walleye fillets from sticking to the basket.
Coat all the Lake Erie Walleye fillets the same way, if your air fryer size does not allow you to place all the Walley fillets in it at one time, cook them in batches but do not stack them on each other
Let the air fryer cook your Lake Erie Walleye fillets for 10 minutes at 400 degrees. Although it is not necessary to flip over your walleye fillets midway through cooking, it is better todo so for a better even crisp on both sides.
Use the lemon wedges for decoration
